Fruity & Nutty Chocolate

Fruity & Nutty Chocolate

Guys! This is so easy and tastes so amazing it’s almost dangerous! 😛 After you’ve tried this you’ll prefer to make your own at home we swear!

You’ll Need:

  • 100 – 200 grams (1/2 – 1 cup) of 70 % dark Chocolate (Ecuador organic)
  • Handful of Dried Fruits
  • Handful of Nuts

1. Melt the chocolate slowly over low heat in a water bath or in your microwave. Make sure your chocolate does not come in contact with water, this will make it unworkable (we don’t want that ). For a quicker melting time, cut the chocolate into smaller pieces

2. Pour the melted chocolate into molds or onto a baking sheet lined with parchment paper or a glass pan to harden. If you choose a glass pan make sure you spread some coconut oil in the pan or use a parchment paper so that the chocolate doesn’t stick to the bottom.

3. Spread the dried fruit and nuts evenly on top.

4. Set it to cool in the fridge for about 30-40 minutes or in the freezer for about 15 minutes.

5. Cut up into chunks and serve cool.

6. Store in the fridge rolled up in parchment paper in an airtight container. This method will keep your chocolates fresh and tasty for longer. You can also store them the same way in your freezer :)

You can choose how much chocolate you use depending on how much you’re making or how thick you’d like it. If you can find the Ecuador Organic Chocolate it will give that extra delicious chocolate aroma!

You can usually find shops where you can pick dried fruits and nuts of your choice :)

Unsalted: Raisins, Hazelnuts, Brazil nuts, Walnuts, Almonds & Peanuts

200 g Ecuador Organic Dark 70% Chocolate

Fresh Breakfast Smoothie

Fresh & Light

Start your mornings FRESH with this amazing smoothie with a twist, Kiwi! This is great for those of you who are in a hurry in the mornings, so fast and so simple! Blend it and take it with you out the door! It will give you that kick you need to feel refreshed before work, college or whatever the day might bring for you 😀

All you need is:

  • 1 Navel Orange
  • 1 Kiwi
  • 1 1/2 Cups Strawberries
  • 1/2 Banana
  • 4 Ice Cubes
  • 1/2 Cup Water
  • 1 Tbsp Coconut Oil

Peal the orange and kiwi, cut into chunks, add all your ingredients in the blender and mix well! (you can add some oatmeal if you like)

Enjoy!! :)

 

Yougurt & Berry Delish

Simple, Healthy & Delicious

We like to treat ourselves with some yogurts and berries for a quick and healthy treat or a light lunch! We usually go for the vegan brands, because we love everything soy 😛 If you don’t like the non dairy yogurts you can go for the low fat brands. We also like using quark for this, it’s low in fat and is really delicious (but it is dairy)

It’s real simple, it’s just yogurts and berries, so choose whatever type of yogurt you like best, blueberry, strawberry, vanilla etc. Then add the berries that you love. We love blueberries, so we always use blueberries no matter what 😛 You can also add oatmeal or nuts if you’re having this for lunch, it will make you feel fuller :)

We have a few examples with the same berries but different yogurts:

Vitamin Boost Smoothie

We think we’ve posted enough sweets the last couple of days, so we decided to share a super healthy Smoothie! :) It’s amazing!

You’ll need:

  • 2 Cups Kale
  • 1 Cup Grapes
  • 1 Cup Pineapple
  • 1 whole navel Orange (peeled)
  • 1/3 Banana
  • 10 Ice Cubes

 

 

Make sure you wash all your fruits and greens. Cut the fruits into chunks and put everything in your blender and mix until it’s well blended.

Rice Pudding

There’s a way enjoying this recipe without making it super sweet and unhealthy. We love this recipe and hopefully you will to. Today we are going to show you how we make our “Sweet” Rice pudding without adding any sugar. Hopefully you guys will enjoy this as much as we do.

This is what you’ll need:

Serves 3

Ingredients:

  • 1 Cup Coconut milk
  • 1 Cup cooked Rice (white or brown)
  • 1 Tbsp Coconut flakes
  • 1 tsp Vanilla essence (or honey)
  • 1 Tbsp Raisins
  • 1/4 Cup Almonds (optional)
  • 1 tsp of Cinnamon (to taste)
  • 1 Cup fresh Strawberries
  • 2. tsp Stevia (optional)

1. You’ll need 1 cup of cooked rice (white or brown). (see tip below on how to make your rice)

2. We need the thicker milk to be mixed with the liquid because it usually separates when stored for some time, so before you open the can of coconut milk shake it well (or stir it well).

3. Pour the coconut milk in a small pot and bring to simmer over medium low heat.

4. Add the vanilla essence (or honey) and cinnamon to the milk and stir to combine.

5. Add the cooked rice to the mix and continue stirring until it is evenly distributed.

6. Let it simmer on low heat in the pot for about 5-10 minutes, you’ll notice the milk starting to boil and the mixture will thicken.

7. You’ll know it’s done when it is all thickened and looks like kinda like the picture below.

8. Scoop the pudding out and into a bowl and set aside to cool for about 15 minutes, stirring occasionally to let it air underneath. Then place it in the fridge to cool completely. This might take 30 minutes, depending on your fridge.

Prep before serving:

– Chop the almonds into chunks or blend in a food processor if you like it to be grainy. Mix the raisins with the chopped almonds, stir in the coconut flakes. Set aside. If you choose to skip the almonds, you can add 1 tbsp extra coconut flakes and raisins (this will make it sweeter)

Strawberry Sauce:

– Mash the strawberries well, or for greater results use a food processor to make your strawberries extra saucy. Add the stevia and blend well.

TIP:

If you don’t have a rice cooker, use a small pot and add

  • 1/2 Cup Rice
  • 1 Cup Water

Cook on high heat with lid, once the water has come to a boil turn off the stove and let it sit until the water has dissolved. About 15 minutes depending on your equipment.

If you have a rice cooker use the instructions given but add a bit more water to the mix because we need the rice to be a bit thicker and not so dry.

 

Serving:

Stir together the cold pudding with the almonds, raisins and coconut flakes and serve the rice pudding in a small portion sized bowl or a glass. Pour the strawberry sauce on top and enjoy! 😀
